The purpose of the show is probably to show some kind of a "WONDER".... that the fish can still stay alive even part of its meat has been eaten.
To the chef, it goes to show "oh how fresh my sushi is! "  Looking at the show there seems no sympathy for the poor fish seeing it's meat being eaten away or the pain it was undergoing. Japanese... always expect this kind of thing from them  Ya... looks like a ST (Siamese Tiger Fish)...
