Fancy Goldfish Options

I bought a custom 180 gallon acrylic aquarium and was going to do saltwater but realized it would cost alot to buy all the right equipment. I have keep fancy goldfish before and was thinking of using the 180 gallon aquarium for fancy goldfish. My questions are, do they prefer fine or coarse gravel bottom, live Jungle Vallisneria or plastic plants, what is most fancy goldfish max size and do pleco's pose a problem with scratching the acrylic if I use them in the fancy goldfish [size=3]
